The defaults are fine-dining standard: ~3× on bottles, 22–28% pour cost on glasses. Casual rooms run leaner markups on higher volume; trophy bottles take a lower multiple by design (nobody pays 3× on a $900 Burgundy — price those on dollars of margin, not multiples).
