The defaults are fine-dining standard: ~3× on bottles, 22 to 28% pour cost on glasses. Casual rooms run leaner markups on higher volume; trophy bottles take a lower multiple by design (nobody pays 3× on a $900 Burgundy, price those on dollars of margin, not multiples). Set your house's truth here and let the ledger argue with you.
