The Wine Program Launch Checklist
A working operator's checklist for building a restaurant wine program that sells, trains, and makes money. Free.
TL;DR: A restaurant wine list is not a collection. It is a machine for making decisions easy and margins healthy. Build it backward from two questions: what does this room actually sell, and what does a server need to say to sell it. Everything below serves those two questions.
I have opened rooms and built lists, and the same avoidable mistakes show up every time: a list too long to train, priced by feel instead of math, full of bottles the somm loves and the guest never orders. Here is the checklist I wish someone had handed me the first time.

Before you buy a single bottle: decide what the list is for
The list is a strategy document. Write these down first.

Build the list: depth over breadth
A new program dies of over-ambition. Tight and trainable beats big and dusty.

The margin math: price backward, not forward
Do not price by what feels fair. Price from a target and check every bottle against it.
